Oat and Raisin Cookies

120g of Butter
120g of Oat Flakes
90g of Raisins
180g of cane sugar
1 Medium Egg
150g of flour type 00

1 Teaspoon of Bicarbonate
70g Large chopped almonds
1g of Cinnamon
1 sachet of Vanillin
1 pinch of salt

Method
The preparation can be summarized in three main steps: first the fats must be mixed with the sugars, then the "powders" must be added and at the end the ingredients that characterize the biscuit (chocolate, raisins, etc.).

Start the preparation by beating the eggs with the brown sugar.

Add the very soft (but not melted) butter and the essences.
​
When the three ingredients are well blended add the "powders" (flour, cornstarch, baking soda and salt).
​
Mix everything until it is possible with a whisk, continue with your hands when the mixture becomes more compact.

Finally add the oats and almonds and mix as little as possible.
​
Form rough balls (about 25 g) without working them too much and place them in a container to put in the freezer.
This step is essential for the success of the biscuits and to prevent them from becoming too flat during cooking.
Leave in the freezer (15/20 minutes) until the balls are very firm. Then arrange them in a baking tray with parchment paper.

Bake for 15-20 minutes in a convection oven at 180 °. Be careful, cooking can vary a lot from oven to oven.
